It took a lot of talking (and some other promises that we won’t discuss), but Bette finally got Jake to reveal the secret formula for his magical pancakes.
But no matter how hard she tried, hers just weren’t the same. Then one day she caught him standing over the batter with a hip flask! He was adding an extra secret ingredient that he had forgotten to mention.
Oh, it was 60 proof alright, but not whiskey. See if you can spot it.
Jake also claimed that it was equally important to get the griddle nice and hot before dropping on the batter. And, NEVER, EVER flip them twice!
1 cup buttermilk (maybe a dash more)
1¼ cups flour
3 tablespoons sugar
¾ teaspoon baking soda
1 teaspoon baking powder
½ teaspoon salt
3 tablespoons butter (melted)
¼ -½ teaspoon vanilla
Combine the dry ingredients in large mixing bowl. Mix well.
Beat the egg. Add it and the melted butter to the buttermilk. Stir in the vanilla. Then whisk the flour mixture into the wet ingredients; don't over do it, a few small lumps are OK.
Let stand for 8-10 minutes.
Heat your griddle to 375º F and coat with cooking spray (or butter, Jake wouldn't have had cooking spray). Griddle is ready when water droplets sizzle. Pour on batter; wait until bubbles form over the entire cake and for the edges to begin cooking before turning. Cook until golden brown.
